Every year my family waits for Thanksgiving just so I may make certain dishes that I refuse to make any other time of year. Collard Greens with Smoked Ham Hocks is one of these dishes. I always complain telling them its too much prep work, but it really isnt at all. Its just my family of 5 wants me to make greens to feed 50 people that is how much they love them.
